 1. Chicken Fried Rice


Ingredients:


2 cups cooked rice (preferably cold)


1 chicken breast (cubed)


1/2 cup peas and carrots (frozen or fresh)


2 eggs (beaten)


3 tablespoons soy sauce


1 tablespoon sesame oil


2 cloves garlic (minced)


2 tablespoons vegetable oil


2 green onions (chopped)



Instructions:


1. Heat a large pan or wok over medium-high heat. Add 1 tablespoon of vegetable oil.



2. Add chicken and cook until browned and cooked through. Remove and set aside.



3. In the same pan, add the remaining oil and sauté garlic until fragrant.



4. Push garlic to the side, then pour beaten eggs into the pan. Scramble them until fully cooked.



5. Add peas, carrots, and cooked rice. Stir-fry everything together.



6. Add soy sauce and sesame oil, and stir well.



7. Add the cooked chicken back in and toss everything together.



8. Garnish with chopped green onions and serve hot.

2. Sweet and Sour Pork


Ingredients:


500g pork tenderloin (cut into bite-sized pieces)


1 egg


1/2 cup cornstarch


Vegetable oil (for frying)


1 red bell pepper (cut into chunks)


1 onion (cut into chunks)


1/2 cup pineapple chunks



For Sauce:


1/4 cup ketchup


3 tablespoons rice vinegar


3 tablespoons sugar


2 tablespoons soy sauce


1/2 teaspoon salt


1 tablespoon cornstarch (mixed with 2 tablespoons water)



Instructions:


1. Coat the pork pieces with egg, then dredge them in cornstarch.



2. Heat oil in a wok and fry the pork pieces until golden and crispy. Remove and drain on paper towels.



3. In another pan, stir-fry the bell pepper, onion, and pineapple for 3-4 minutes.



4. In a separate bowl, mix together the sauce ingredients and cook in the pan until it thickens.



5. Add the fried pork into the sauce and toss to coat evenly.



6. Serve with steamed rice.

3. Kung Pao Chicken


Ingredients:


2 chicken breasts (cubed)


1/2 cup roasted peanuts


2 dried red chilies


1 tablespoon soy sauce


1 tablespoon rice vinegar


1 tablespoon hoisin sauce


1 teaspoon sugar


1 teaspoon cornstarch


2 teaspoons sesame oil


2 cloves garlic (minced)


1 tablespoon ginger (minced)


2 green onions (chopped)



Instructions:


1. In a bowl, mix soy sauce, rice vinegar, hoisin sauce, sugar, and cornstarch to make the sauce.



2. Heat sesame oil in a wok over medium heat. Add garlic, ginger, and dried chilies and sauté until fragrant.



3. Add chicken cubes and stir-fry until fully cooked.



4. Add peanuts and green onions, then pour the sauce over everything. Stir until the sauce thickens.



5. Serve with steamed rice.

4. Mapo Tofu (麻辣豆腐)


Ingredients:


400g soft tofu (cubed)


200g ground pork or beef


2 tablespoons doubanjiang (fermented chili paste)


1 tablespoon soy sauce


1 tablespoon rice wine


1 teaspoon sugar


1 teaspoon cornstarch mixed with 2 tablespoons water


2 cloves garlic (minced)


1 tablespoon ginger (minced)


1 tablespoon Sichuan peppercorns (optional)


2 green onions (chopped)


2 tablespoons vegetable oil



Instructions:


1. Heat oil in a wok and add garlic, ginger, and Sichuan peppercorns. Stir-fry until fragrant.



2. Add ground meat and cook until browned.



3. Stir in doubanjiang, soy sauce, rice wine, and sugar.



4. Add tofu and gently stir to coat. Pour in a little water if the sauce is too thick.



5. Let the tofu simmer for 5-7 minutes.



6. Add cornstarch mixture to thicken the sauce.



7. Garnish with green onions and serve with rice.
